How They’re Grown: Swell Oyster Co. starts all of their juvenile oysters in suspended gear. This allows the juvenile oysters to feed on the highest densities of plankton available while also keeping them in warmer water. These factors all contribute to a fast-growing oyster. Once the oysters are large enough to be retained on ¾” mesh they are then moved to open top cages where they sit 8” above the surface. The oysters are constantly tumbled to ensure a beautiful, plump, deep cupped, oyster. How They Taste: well balanced, clean brine, hint of chicken stock with a sweet clean finish.

I had 50 of the Swell Point Breaks shipped to my house in Virginia overnight. They were packaged well and were still very cold when I received them. The oysters had a great crisp taste, nice and salty! Will definitely order again.
